The root of the
lotus
is edible and also a health drink is
made from it. There are two kinds
available in
Thailand, that is
the Chinese lotus
root seen here, and
the Thai lotus root
(fig.).
The Chinese variety
is rather bulbous,
with about three to
four separate
segments and hollow
tube-like canals on
the inside. When cut
up, the slices are
circular with holes.
