Chabu is a kind of Japanese-style soup-like hotpot with thinly sliced meat and vegetables boiled in a broth. As the soup stock is often of a dark colour, it may in Thai be referred to as chabu nahm dam (ชาบูน้ำดำ), i.e. ‘black water shabu’.
